Wild Rice Blend Rice Dish
Goes great withhttp://pin.it/0-O0B5Z planked grilled salmon.
It has a hearty nutty flavor and can be
made 24 hours ahead and reheated in the
oven just prior to serving.

2 ½ cups Wild Rice Blend (used Royal Blend)
Texmati White, Brown, Wild, Thai Red Rice
4 cups chicken broth
½ cup white wine
6oz mixed mushrooms – portobello, oyster
and shitake etc diced into ½ inch pieces
½ Large Vidalia onion sliced thin & chopped
2 cloves garlic minced
2 sticks of unsalted butter
1/3 cup minced carrots
1/3 cup chopped fresh chives

Melt 1 stick of butter in large saucepan.
Add onion & garlic cook until translucent.
Add mushrooms & wine, cook for~10minutes
Cook mushrooms down along with other
Stick of butter.
Add carrots & cook 5 more minutes
Add rice & broth. Cook covered bring to boil,
Then reduce to simmer for 15 minutes, then
Take off heat, leave covered for additional
10 minutes.
Stir in chives.
